Serves 8 to 10 | Total time: 1 hour 35 minutes | Active time: 35 minutes
Some desserts mark an occasion. This one practically is the occasion — red, white, and blue layers that stop conversation for a second when you carry it to the picnic table.
Better still, this patriotic berry trifle asks almost nothing of you. There is no baking, no piping bags, no last-minute fuss — just almond-kissed angel food cake, a fluffy cream cheese whipped cream, and the freshest berries you can get your hands on, stacked into something that looks like you spent the whole afternoon on it.
It's our favorite kind of summer dessert because the timing works around everything else. Assemble it in the morning, tuck it into the fridge, and let it chill while the burgers come off the built-in grill and everyone drifts toward the patio. By the time the fireworks start, dessert is already done.

Berry Trifle Ingredients
- 1/4 cup plus 2/3 cup sugar
- 1/4 cup fresh lemon juice
- 1/4 teaspoon almond extract
- 1 premade angel food cake, cut into 1-inch slices
- 1 pound cream cheese, at room temperature
- 2 cups heavy cream, at room temperature
- 2 pints blueberries
- 2 pints strawberries, hulled and sliced
How to Assemble the Berry Trifle
- First, heat 1/4 cup sugar, the lemon juice, and 1/4 cup water in a saucepan over medium-high heat, stirring, until the sugar dissolves. Then remove from the heat and stir in the almond extract.
- Next, brush both sides of each slice of cake with the syrup. After that, cut the slices into 1-inch cubes.
- Meanwhile, beat the remaining 2/3 cup sugar and the cream cheese with a mixer on medium speed until smooth and light. Then add the cream and beat on medium-high speed until smooth and the consistency of whipped cream.
- To assemble, arrange half of the cake cubes in the bottom of a 13-cup trifle dish. Next, sprinkle evenly with a layer of blueberries. After that, dollop half of the cream mixture over the blueberries and gently spread. Then top with a layer of strawberries.
- Subsequently, layer the remaining cake cubes on top of the strawberries, then sprinkle with more blueberries and top with the remaining cream mixture.
- Finally, finish with the remaining strawberries and blueberries, arranging them in a decorative pattern. Cover and refrigerate for 1 hour before serving.
Tips for Clean, Distinct Layers
A clear glass trifle dish does half the decorating for you, so take a moment to press the prettiest strawberry slices against the glass as you build each layer. Spread the cream gently rather than stirring it in, and you'll get those sharp bakery-window stripes instead of a pink swirl.
Make It Ahead
This trifle is one of those rare desserts that gets better with a rest. The hour in the fridge lets the almond syrup soak through the cake and the layers settle together — and if it sits a little longer while you're manning the outdoor kitchen grill line, nobody will complain.
